There’s nothing quite like the thrill of cooking a meal in the backcountry. Even the simplest of ingredients becomes a divine concoction when you’re hungry from hiking or paddling. You empty your bowl of macaroni and cheese, picking out the last noodle with your fingers, and then lean back on the soft earth with a deep sense of satisfaction. That is, until you take a look at all your dishes and remember these have to be done before you hit the hay.
Scrubr®
Thanks to Lunatec, though, you’ve got a dishcloth that won’t still be wet when you pack it away in the morning (let alone half an hour before bed) and that’s tough on the food that remains stuck to the inside of your cooking pot. Thanks to the weave of the Scrubr® Dishcloth it also rinses free of debris, which means it doesn’t get smelly.
Seeing as it was winter up here in the Rockies (and I’m expecting a little bambino) I put this dishcloth to the test in my own kitchen, scrubbing pots and pans that carried more debris than you’d ever see in the backcountry. The Scrubr® did the job, rinsed off well and was dry within minutes. I’ll be sure to put it to the test on some camping this summer.
Trekr®
Lunatec also sent me their Trekr® Self-Cleaning Washcloth for review. Now this is something I wish I’d had during my 9 weeks in Nepal. Made from QuickDri nylon material, the Trekr® apparently never needs washing because it rinses clean every time you use it.
Again, I put it to the test in my bathroom, though the state of my skin would hardly compare to the sweat, grime and sunscreen I accumulate in the outdoors. Still, I was impressed by how it exfoliated, dried very quickly and felt clean enough to use again and again. One of my favourite items to bring on camping or hut-based trips is a washcloth so that I can clean off my face and neck before I go to bed. Having a quick-dry option like the Trekr® will be a definite bonus.

My favourite one-pot dish is a soup/stew recipe I got from my brother-in-law. I don’t know if he has a name for it. Here’s the recipe and method that makes two good size servings.
Scrub and dice one large or two medium potatoes
Dice one medium [cooking] onion
Using a medium size pan, Saute (fry) in a little bit of olive oil until they start to soften
Add one can of [drained] baby clams, and one can of milk (I use almond or rice milk as I don’t digest dairy)
Season with salt, pepper, and curry to taste.
Let simmer for 15-20 minutes until potatoes are fully cooked
Serve with a salad and/or bread.
This is great for camping because nothing needs refrigerating. It’s even good for backcountry camping/hiking for the same reason. [You can make the salad ahead and bring it in a plastic bag and add some lemon juice and oil.)
You do have to keep an eye on the heat and stir the dish occasionally so the milk doesn’t scald or stick.

My favorite one pot meal is chili! It’s such a simple, delicious and hearty meal that always satisfies at the end of a big day! I will frequently make it the day before I leave for the camping trip so that all I have to do is heat it up. Quick and easy!
My favorite one pot recipe is a spicy chicken casserole!
2 Cans Canned Chicken
1 Cans Cream of Mushroom
1 Can Cream of Celery
Water
Premixed Seasoning: Black Pepper, Paprika, Garlic Powder, Dried Onion, Crushed Red Pepper, etc.
2 Cups Brown Rice
Bring the liquids up to almost boiling, add the rest of the ingredients, reduce to simmer, and cook until rice is done (about 25-30 minutes).
It’s really easy, and I really enjoy it!
Kraft dinner, of course!
Couscous, cranberries, walnuts, pre cooked chicken. Boil water, add couscous cover, let sit 5 minutes. During last minute add other ingredients.

What a great giveaway! A few of my friends require gluten and dairy-free meals. That meant ditching any of my go-to pasta dishes and getting creative with beans and alternative grains.
I’ve gotten in the habit of pre-cooking batches of quinoa and adding in dried fruits, veggies, and nuts on the trail. For those of us that eat meat, we pre-cook sausage (or whatever meat you choose), freeze it, and use it to keep other items in our pack cool before throwing it in with meal at cooking-time. These meals also taste great cold or hot.

The best one-pot dinner would have to be Shipwreck Stew, hands down! Its so simple and easy to make!
What’s in it!?
Shipwreck Stew
2 lbs ground beef
21 12 ozs condensed tomato soup
2 onions (chopped)
5 potatoes (cubed)
30 12 ozs kidney beans (undrained)
Just throw it all in a big pot. You can serve with cornbread or a side of your choice. Delicious!
Here’s an oldie from when I was a girl scout in the 60′s:
Girl Scout Stew
1 lb hamburger, cooked & drained of excess fat*
3-4 cans vegetable soup
1/2 cup diced onions**
Put cooked hamburger in pot. Add chopped onions, sauté for a minute or two. Pour in the vegetable soup and heat through.
*I cook the hamburger at home, package in quart freezer bags and freeze. When we go camping or I need a quick, easy meal I just pull out one of these bags.
**I do most of the food prep–chop veggies, marinate meat, portion out pancake/biscuit mix, etc. BEFORE we leave home. That way I spend more time enjoying the outdoors and my family still eats very well..
Gnocchi for Two*
1 onion, chopped
)
1 clove garlic, chopped
vegetable oil
3-4 slices bacon, chopped *or* a packet of chopped pancetta (Italian bacon)
1 can tomatoes (NOT tomato sauce)
1/2 cup of wine (optional – you can drink the rest
oregano, basil, garlic
1 packet shelf-stable gnocchi
Grated hard cheese (like Parmesan, Romano, etc.)
Cook the chopped onion & garlic in vegetable oil till they are soft. Add the bacon, herbs, tomatoes and wine, Bring to a boil, add the gnocchi, and heat through. Don’t over-cook the gnocchi or they’ll fall apart. Serve with grated cheese, a crusty bread and the rest of the wine.
*It’s easy enough to double, triple, the amounts etc. if you are feeding more people.

I hope this is a random draw and not based on my answer to the question. I’m not a good eater. I don’t cook much. I usually go without eating rather than cook. I don’t have a pot for camping food, I have a stick and I make hotdogs or marshmallows. That’s about it.
It will be random, no worries. And I can appreciate a good marshmallow! I hope you at least bring chocolate and Graham crackers.
My favorite is a grill stew – we put sausage, peppers, potatoes and onions and whatever else looks good on the grill then mix it all together when it’s done. It’s awesome.
My fav meal is dehydrated potatoes/chives/cheddar from MEC. I add in dehydrated ground beef that I fry with taco seasoning and dehydrated mushrooms.
I like hot dogs. So easy!
Nope, there’s soy in chocolate & graham crackers. That’s likely why I don’t cook much either. Practically everything contains soy. I can’t even eat some days because I can’t find actual food.
